History of Gushtaba:

Gushtaba literally means "meat ball" in Kashmiri. Its origin can be dated back to the Mughal period when Kashmir enjoyed the position of being one of the foremost centers of trade and cultural exchange. The same was influenced by the Persian meatball dish called kofta, which was then improvised and tailored according to taste buds. With time, Gushtaba became an intrinsic part of Kashmiri cuisine and is served at special occasions and celebrations.

Ingredients:

    • 1 pound ground lamb
    • 1 onion, finely chopped
    • 2 cloves garlic, minced
    • 1 tablespoon ginger paste
    • 1 tablespoon cumin powder
    • 1 teaspoon coriander powder
    • 1/2 teaspoon turmeric powder
    • 1/2 teaspoon red chili powder
    • Salt, to taste
    • 2 tablespoons lemon juice
    • 2 tablespoons ghee or oil
    • 1 cup yogurt
    • 1 cup water
    • Fresh cilantro, for garnish

Instructions:

  • Preheat the oven to 400°F (200°C).
  • In a large mixing bowl, combine the ground lamb, chopped onion, minced garlic, ginger paste, cumin powder, coriander powder, turmeric powder, red chili powder, and salt. Mix well.
  • Add the lemon juice and mix until the mixture is well combined. 
  • Use your hands and shape the mixture into small meatballs, about 1½ inches in diameter. Set the meatballs on a parchment-lined baking sheet.
  • Drizzle the ghee or oil over the meatballs and gently roll them around to coat evenly.
  • Bake the meatballs in the preheated oven for 15-20 minutes, or until they are cooked through and lightly browned on the outside.
  • While the meatballs are baking, prepare the yogurt sauce. In a big bowl whisk together the yogurt, water, cumin powder, coriander powder and salt.
  • Take out the meatballs from the oven and add it in the yogurt sauce. Gently mix it up so that the meatballs are well coated.
  • Now, to finish, reduce the oven temperature to 300°F and bake the meatballs in the yogurt sauce for another 10-15 minutes, or until it has thickened a bit.
  • Garnish with fresh cilantro and serve over basmati rice or with naan bread.
