Today, I am going to share with you a recipe that brings together the sweetness of raspberries and the brightness of basil: Raspberry Basil Jam Thumbprints. These little cookies not only look cute but actually hold flavor in them, perfect for any occasion.

Here's what you'll need:
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/4 cup confectioners' sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 cup raspberry basil jam — see below for recipe
- Fresh raspberries and basil leaves for garnish
- Raspberry Basil Jam Recipe:
- 2 cups fresh raspberries
- 1/4 cup granulated sugar
- 2 tablespoons fresh basil leaves, chopped
- 2 tablespoons lemon juice
2. In a medium bowl, whisk together flour, baking soda, and salt.
3. Cream together butter and sugars until light and fluffy in a large bowl.
4. Beat in the eggs and vanilla extract.
5. Gradually add the flour mixture and mix it well, then stir in the raspberry basil jam.
6. Use an ice cream scoop or your spoon to scoop out balls of dough onto the prepared baking sheet.
7. Create a thumbprint in the middle of each cookie and fill with a small amount of jam.
8. Bake for 18-20 minutes or until edges are lightly golden brown.
9. Top with fresh raspberries and basil leaves.
- Make them very flavorful by using really good jam.
- Add a sprinkle of sugar to give some extra sweetness.
- Mix it up with a different jam or herbs for added flavor.
- Sandwich cookies with another layer of jam.
