Here's what you'll need:
- 1/2 sticks unsalted butter, softened
- 1/2 cup granulated sugar
- 2 tablespoons freshly squeezed lemon juice
- 2 sprigs of fresh rosemary, chopped
- 2 1/4 cups all-purpose flour
- Salt to taste
2. In a large bowl, cream together the butter and sugar until light and fluffy.
3. Add lemon juice and chopped rosemary; mix well.
4. Gradually add flour and salt; mix until a dough is formed.
5. Roll out dough on a floured surface to a thickness of about 1/4 inch. Cut into desired shapes.
6. Place on prepared baking sheet and bake for 18-20 minutes, or until lightly golden brown.
7. Let cool on sheet 5 minutes then transfer to a wire rack to cool completely.
Tips and Variations:
- Fresh rosemary is best.
- Adjust the lemon juice to taste.
