Gulab Jamun is one of the classic Indian sweets—essentially dumplings, deep-fried and then soaked in a sweet, perfumed syrup flavored by rosewater and cardamom. Here is a recipe on how to make Gulab Jamun at home.



Ingredients:

    • 1 cup milk powder
    • 1/2 cup all-purpose flour
    • 1/4 tsp baking soda
    • 1/4 tsp salt
    • 1/4 cup ghee, clarified butter
    • 1/2 cup lukewarm milk
    • Rosewater syrup, recipe below
    • Chopped pistachios or almonds, for garnish

Rosewater Syrup:

    • 1 cup granulated sugar
    • 1 cup water
    • 2 tablespoons rosewater
    • 1 cardamom pod, crushed

Instructions:

1. Mix the milk powder, flour, baking soda, and salt together in a mixing bowl.
2. Add ghee and beat until it resembles crumbs.
3. Gradually add milk and mix until it becomes a smooth dough.
4. Close and rest the dough for 30 minutes.
5. Divide the dough into small balls of the size of a small lemon.
6. Deep-fry the balls in hot oil till golden brown.
7. Soak the fried dumplings in rosewater syrup for at least 30 minutes.
8. Warm or at room temperature, sprinkle with chopped nuts.


Rosewater Syrup:

1. In a saucepan mix the sugar, water, and rosewater with crushed cardamom.
2. Bring it to a boil and then lower the heat; let it simmer for 5 minutes.
3. Strain and let the syrup cool.

Tips:

  • Deep-fry the dumplings in a deep frying pan with at least 3-4 inches of oil.
  • Tune the amount of rosewater and cardamom to taste.
  • Adding a few drops of food coloring to the dough will give it a pink color.
  • Gulab Jamun can be stored for up to 3 days in the fridge, tightly closed in an airtight container.
