Here's what you'll need:
- 2 1/4 cups all-purpose flour
- 1 tsp. baking soda
- 1 tsp salt
- 1 cup unsalted butter, softened
- 3/4 cup white granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 1/2 cups semi-sweet chocolate chips
- 1 cup chai spice mix (or 1/2 teaspoon ground cinnamon, 1/4 teaspoon ground cardamom, and 1/4 teaspoon ground ginger)
2. In a medium bowl, whisk together flour, baking soda, and salt.
3. In a large bowl, cream together butter and sugars until light and fluffy.
4. Beat in eggs and vanilla extract.
5. Gradually mix in the flour mixture, then stir in chocolate chips and chai spice mix.
6. Use an ice cream scoop or spoon to form balls of dough, about 1 tablespoon each, onto the prepared baking sheet.
7. Bake for 10–12 minutes or until edges are lightly golden brown.
8. Let the cookies cool on the baking sheet for 5 minutes before moving them to a wire rack, where they will cool completely.
9. For the chocolate ganache, melt 1 cup chocolate chips in a double boiler or in the microwave in 30-second increments, stirring between each interval until smooth.
10. Sandwich a spoonful of ganache between two cooled cookies and enjoy!

- Use more or less chai spice mix to your liking.
- Add a little sea salt on top for some added texture and flavor.
