A Royal Feast: Butter Chicken, Lamb Rogan Josh, and Garlic Naan | The Food Diaries

Introduction:

Hello foodies! Today, I have come with you on a ride that travels to taste the amazing richness in non-vegetarian cuisines across India. In my today's post, I have three star items representing the varied and rich cuisines of India: Butter Chicken, Lamb Rogan Josh, and Garlic Naan.

 

Butter Chicken Recipe:

    • 1/2 lbs boneless, skinless chicken breast or thighs
    • 2 large onions
    • 2 cloves minced garlic
    • 1 tbsp ghee or butter
    • 2 tbsp tomato puree
    • 1 tsp garam masala
    • 1/2 tsp cumin powder
    • Salt and pepper to taste



Instructions:

1. Marinate chicken in yogurt with cumin and coriander powder, ginger-garlic paste, and salt for at least 30 minutes.
2. Heat the grill and grill or bake the chicken until done.
3. Heat a saucepan and sauté the onion and garlic until golden.
4. Add the tomato puree, garam masala, cumin powder, and ghee or butter.
5. Simmer for long enough until the sauce has thickened; serve over.


 

Traditional Lamb Rogan Josh Recipe:

    • 1 pound boneless lamb shoulder or shanks
    • 2 large onions, thinly sliced
    • 2 cloves of garlic, crushed
    • 1 tablespoon of ghee/ oil
    • 1 teaspoon cumin powder
    • 1 teaspoon coriander powder
    • 1/2 teaspoon turmeric
    • 1/2 teaspoon red chili powder
    • Salt and pepper to taste


Instructions:

1. Combine lamb with the yogurt and all the other spices. Allow these flavors to work into the meat for at least 30 minutes.
2. Pressure-cook or Dutch-oven cook the lamb until tender.
3. In a saucepan, sauté onions and garlic until golden.
4. Add the cumin powder, coriander powder, turmeric, and red chili.
5. Add some water, cook until slightly thick. Serve over the lamb.




Garlic Naan:

    • 1/2 cups all-purpose flour
    • 1/4 teaspoon active dry yeast
    • 1/2 teaspoon salt
    • 1/4 cup lukewarm water
    • 2 cloves of garlic, minced
    • 1 tablespoon of melted butter


 Instructions:

1. Combine flour and yeast in a bowl.
2. Add water gradually and keep kneading the dough for 5 to 7 minutes.
3. Rest the dough for 1 hour.
4. Divide the dough into 6-8 equal portions.
5. Roll it up like a ball and press it a bit and do the same with the remaining 6-8 balls.
6. Apply garlic butter on the tops and start pan-frying till golden in colour.

Conclusion:

These three dishes go on to show the richness and versatility in different flavors throughout the non-vegetarian menu of Indian food. Butter Chicken carries in it a creamy flavor with light spicing, and the boldness of aromatic flavors is experienced from Lamb Rogan Josh.
